WThis is a simplified take on a cocktail found on a new cocktail list. Designed as a batch prepared mix that's bursting with essence associated with Christmas time, which makes it excellent for your celebration. Reserve the remaining syrup you can use for morning drinks, sweets, or to mix more rounds of bikinis.

Serves 10 guests
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Syrup: Put all the items inside a pan, bring to a gentle boil, agitating so the sugar melts. After that, turn off the burner allowing it to cool fully. Transfer to a sealable bottle, cap it and refrigerate it chilled, where it will keep for around four weeks.
Preparing the Batch Mix: Combine all the spirits and syrup into one big jug, let it rest for an hour, then strain , ideally through cheesecloth, so it's completely strained.
For serving: Add 85ml of your cocktail base into a cocktail shaker filled with ice, and stir gently for a minute to cool it down. Pour into a frosted cocktail glass or a similar vessel, top with the cranberries and complete it using a brief mist with the mandarin essence over the top.
